for the love of the slurp

Hai Hai started over a decade ago, fuelled by an unhealthy obsession with Japan’s favourite noodle soup.

It’s hard not to be enamored with the meticulous attention to detail, the laborious hand-made care put into each component of the bowl and the ruthlessness of each ramen chef in how they ran their shop (and their customers). But it wasn’t the consistency or ‘one right way’ of doing things that was so appealing.

Just travelling region to region gives you a plethora of styles to choose from, whether its a thick and rich Sapporo style, a smart sweet & salty soy-based broth from Tokyo, or arguably the ‘king’ of all styles, a pure white tonkotsu from Kyushu - there are more styles than you have time to sample.

But beyond the regional styles that characterise the climate, people and flavours of the area it’s made, it’s the wild variations in ingredients, techniques and flavour preferences of each chef that offered the most space for individual flare.

We whole-heartedly believe in the individuality of each shop being its biggest asset, not only to stand out from others, but also to complement the dining scene and give everyone the chance to experience more styles, flavours and journeys in each bowl.

But we get it, not everyone is so head-over-heels when it comes to a hot bowl of noodle soup… that’s why we take the same approach with our side dishes and izakaya menu.

Blending Japanese flavours with western techniques and vice-versa, we’re always experimenting and finding new ways to give you another reason to come back to Hai Hai, even if it’s just for a snack and a drink.
